When I’m at the fish counter of the supermarket, I’m always attracted to the tilapia – in part because it sounds exotic, but mostly because it’s cheap. The problem is that I didn’t have the slightest idea what to do with this fish.
If you’re in the same boat, I’ve found a great recipe that not only uses tilapia in a delicious way, but also can be prepped and cooked in under 20 minutes. In fact the fish cooks for 2 to 3 minutes per side, and the prep is pretty much just cutting up cucumbers and radishes.
Try Tilapia with Cucumber and Radish Relish. I know you’ll like it. I’ve found that the tilapia goes great on a toasted hamburger bun with the cucumber radish relish on top, and some lettuce tucked in.
There’s no reason to pass up tilapia any more.

Tilapia with Cucumber Radish Relish
2/3 cup chopped, seeded cucumber
1/2 cup chopped radishes
1 teaspoon vegetable oil
2 tablespoons tarragon vinegar
1/4 teaspoon dried tarragon
1/8 teaspoon salt
4 (6 oz.) tilapia fillets
2 tablespoons butter
Combine the first seven ingredients in a small bowl; mix well. Let stand at room temperature while preparing fish. Saute tilapia in butter in a large skillet over medium heat for 2 to 3 minutes on each side or until fish just begins to flake easily when tested with a fork. Transfer to serving plates. Spoon cucumber mixture over each serving.
